Simple Joy of Drawing uses colored pencils and paper, and Mixed Media Joy has you pick one wet + one dry medium to mix and explore. Yes, these classes are beginner-friendly. I can’t really assess what level of beginner you are (everyone’s starting point is different), but the bundle is designed to support you step by step. The Simple Joy of Drawing covers drawing foundations, and Mixed Media Joy focuses on mixing mediums and experimenting with materials.

Although this class is geared toward and teaches with traditional mediums.
You can use a gouache paint brush (Adobe has those sets) and a colored pencil like brush (like the Shale brush on procreate) to mimic the outcome of the art lessons.
I think it depends on how well you can adapt these lesson into your preferred medium - but the concepts are definitely transferrable. -
